SEAR-IOUSLY GOOD GRILLING

 

GRILLED TRIPLE CITRUS SALMON

ingredients

[4] 6 oz. salmon filets

½ cup orange juice

¼ cup lemon juice

¼ cup lime juice

¼ cup orange marmalade

2 garlic minced garlic

3 tbsp. soy sauce

¼ cup brown sugar

1 tbsp. cornstarch

1 tbsp. water

Cedar planks (for  grilling)

preparation

• Soak cedar planks in water for 2 hours

• In a medium saucepan whisk together orange , lemon & lime juices,  marmalade, garlic, soy sauce& brown sugar.

• In a small bow, whisk cornstarch & water. Slowly stir into the marinade and bring to a boil over medium high heat until the mixture begins to thicken.  Remove from heat.

• Heat grill to medium low heat.  Place salmon on the cedar planks skin side down. & season with salt & pepper.  Brush half of the marinade on the tops of the salmon and grill for 12-15 minutes.

• Transfer the salmon to plates & remove from skin.  Brush remaining marinade over salmon & serve.

GRILLED CHILI LIME SHRIMP

Ingredients

1 lb  peeled & deveined shrimp (tail on)
¼ cup fresh lime juice
2 tbsp olive oil
1 tbsp  cilantro leaves (finely chopped)
2 tbsp Thai sweet chili sauce
½ tbsp  honey
pinch of  salt

preparation

Soak bamboo skewers in water for 30 minutes
In a bowl, mix all of the marinade ingredients with a whisk and add shrimp an marinate  for 30 minutes

Grill until shrimp are pink and slightly charred
