SEAR-IOUSLY GOOD GRILLING
preparation
• Mix all ingredients (except the olive oil) in a food processor & blend until the herbs are finely chopped. Add 3 tbsp. olive oil & pulse until everything is combined. Set aside.

¾ cup fresh cilantro
¼ cup fresh oregano
1 clove garlic
1 tsp. red pepper flakes
¼ tsp. cumin
2 tbsp. red wine vinegar
1 tbsp. lime juice
3 tbsp. olive oil
CHIMICHURRI SAUCE
preparation
• Place all ingredients in a small bowl and bring to a boil. Whisk until the sugar & salt are completely dissolved. Remove from heat & allow to cool to room temperature.
• Pour into a jar or squeeze bottle and let rest in the refrigerator one day before using.

•2 tbsp. dark brown sugar
•1 tbsp. ketchup
•1 tbsp. Texas Pete’s Sauce
•1 tsp. red pepper flakes
•1 tsp. ground black pepper
•1 tsp. kosher salt
CAROLINA VINEGAR SAUCE

•Mix all ingredients in a small bowl. Gently toss until everything is combined. Set aside.
